High Protein Pancakes

If you like crepes, you will love these moist pancakes!

1 cup nonfat cottage cheese
1/3 cup flour
2 Tbsp coconut oil
3 eggs
2 Tbsp sugar
1 Tbsp vanilla extract
1/8 tsp salt

Place all ingredients in a blender and blend until smooth. Thin with water if needed.
Preheat a griddle and coat with coconut oil. Pour batter, 1/3 cup per pancake. Cook until bubbles appear, then flip and cook until golden. Serve topped with fruit and greek yogurt.
Makes 8 pancakes
Per serving (2 pancakes): 200 calories, 16 grams carbs, 12 grams protein, 12 grams fat.
