Easy Smoked Salmon
1# Salmon fillet
2 Tbsp brown sugar
1 tsp salt
¼ tsp pepper
1 Tbsp liquid smoke
Place salmon, skin side down in a 11x7x2 inch pan coated with non-stick spray. Sprinkle fish with brown sugar, salt and pepper. Drizzle with liquid smoke. Cover and refrigerate for 4-8 hours.
Drain and discard liquid. Bake at 350 degrees for 35-45 minutes or until fish flakes easily with a fork. You may eat this warm or cool to room temperature, then cover and refrigerate 8 hours or overnight and serve with crackers.
