Fantastic Beans and Rice

Serves 6

1 medium chopped onion
½ cup chopped green pepper
2 minced garlic cloves
2 Tbsp olive oil
1/3 cup minced cilantro
3 cans (16 oz) red or black beans, rinsed & drained
½ tsp salt
½ tsp ground cumin
1/8 tsp pepper
3 cups cooked hot rice

In large nonstick skillet, sauté onion, green pepper and garlic in oil until tender. Add cilantro, cook and stir until wilted, about 1 minute. Stir in beans, salt, cumin and pepper. Cover and simmer for 10-15 minutes. Serve over rice.
One serving= ¾ cup bean mixture w/1/2 cup rice= 345 calories/6 gm fat/58 gm carbohydrate/11 gm fiber/13 gm protein.
