Grilled Kebobs

Serves 4

1# Sirloin Steak (cubed) or 8 large raw shrimp (peeled and deveined) & 8 large sea scallops or 1# firm fish
4 cherry tomatoes
8 jumbo mushrooms
8 pineapple chunks (save ½ cup juice)
8 green or red pepper chunks
Salt, Pepper, garlic powder, paprika, basil
¼ cup olive oil

Use metal or wooden skewers, if using wooden, make sure to soak in water for ½ hour. Build kebobs using meat/fish and vegetables. Mix pineapple juice, spices and oil and baste kebobs. Grill until meat/fish is fully cooked. Serve over a bed of rice.
